Good post, John. At Green Mountain at Fox Run, a women's healthy weight loss retreat, we've been teaching mindful eating for about two decades now. As you note, one of the more important points for many people is to listen to internal cues for hunger and satisfaction, yet many of us have lost an awareness of cues. That's because we've dieted for years, which requires us to follow external rules instead of listening to what our bodies tell us. Other reasons include the chaotic eating that is a big part of many of our busy lifestyles; chaotic eating can throw off internal cues in large part because we're not supporting the efficient operation of our bodies. We've posted a few articles on our website that outline some key points for mindful eating:

http://www.fitwoman.com/fitbriefings/mindful-eating2.shtml and

We'll also post in a couple of weeks an article that includes a hunger/satisfaction rating scale to help people get back in touch with their cues.
